Parents of the Indian Township After School Program’s Cooking project were treated last week to a special dinner prepared by and/or served by their child. The 4 week project culminated in this delicious event, and it all began with a theme chosen by the children: Mexican food. The students, along with their project leader, Ms. Lydia, chose an appetizer, a first course, a main course and a dessert, and prepared one a week to taste before making it for their parents. There was only one recipe that did not make the menu, and that was the one they had chosen for the dessert. A substitute recipe was found, and luckily was delicious!

The menu went like this:

Appetizer – Black Bean Dip with Tortilla Chips

First course - Chicken Enchilada Soup

Main course – Tacos (with a Native American Twist)

Dessert – Strawberry Margarita Pie

The students were eager to show their parents what they had learned, and took great pride in serving and preparing the meal. Thank you to those parents who came and showed their support for our program.

In other news, our After School Program is partnering with the migrant program Hand and Hand, to make a wreath for every elder in Indian Township. We believe that teaching the students to give back to their community is important, and what better way than to make an elder’s holiday a little more joyous? This wreath making project is ongoing, and will include a parent/child wreath making/supper event with three agencies combining their efforts to it; the After School Program, Hand and Hand, and the LAUNCH Program from our Health Center. I will have more news on that next week, as the event hasn’t happened as of press time.
