Holiday Recipe from Sharon Frost: Russian Tea Cakes

1 cup butter or margarine, 2-1/4 cup flour, 1/2 cup confectioners sugar, 1 tbsp vanilla, 1/2 tsp. salt, 3/4 cup finely chopped nuts or coconut.

Cream shortening, add sugar, cream again. Add salt and flour and work in well with hands. Blend in vanilla and nuts. Chill for one hour then form into balls about 1 inch in diameter. Place 2-1/2 inches apart on ungreased baking sheet. Bake 10-12 minutes at 350 degrees. Should not brown. While warm, roll in confectioners sugar. Let cool and roll again. Yields 3-4 dozen.
